3 Light Potato Salads

1 – Potato salad with eggs:

Ingredients for 4 people:  5 pt  –  3 pt  –  1 pt  / person –
  • 500 boiled potatoes
  • 300 g of boiled carrots
  • 300g cooked peas
  • 3 hard boiled eggs
  • 2 tablespoons light mayonnaise
  • 1 tablespoon of skimmed milk
  • salt and pepper
Preparation :

In a bowl, place the diced apples, the sliced ​​carrots and the peas, then add the chopped hard-boiled eggs.
In a bowl, beat the mayonnaise and milk well, then season with salt and pepper and pour into the salad bowl.
Mix everything well and place in the fridge until ready to serve.

2 – Potato salad with tuna:

  • 500 boiled potatoes
  • 300 g of natural tuna
  • 1 cucumber
  • parsley
  • 1 tablespoon olive oil
  • 1 tablespoon of vinegar
  • salt and pepper
Preparation :

In a bowl, place the diced apples, the sliced ​​cucumber and the crumbled tuna.
Mix the oil and vinegar then season with salt and pepper and pour into the salad bowl.
Mix everything well and place in the fridge until ready to serve.

3 – Potato salad with chicken and courgettes:

  • 500 boiled potatoes
  • 2 baked chicken cutlets
  • 2 courgettes grilled in the oven or on the plancha
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt, pepper, thyme
Preparation :

In a bowl, place the diced apples, the diced cooked chicken, the sliced ​​courgettes and mix.
