Ingredients
4 chicken leg quarters (skin-on, bone-in)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with foil and place a wire rack on top if available.
Step 2: Pat the chicken leg quarters thoroughly dry with paper towels. This is crucial for achieving crispy skin.
Step 3: In a small bowl, whisk together the olive oil, salt, pepper, paprika, garlic powder, and onion powder.
Step 4: Rub the spice mixture all over the chicken, making sure to get some under the skin for maximum flavor.
Step 5: Place the chicken on the wire rack and roast for 45 to 55 minutes, or until the skin is golden brown and the internal temperature reaches 185°F.
Step 6: Let the chicken rest for 5 minutes before serving to ensure the juices redistribute throughout the meat.
Notes
For extra crispy skin, leave the chicken uncovered in the fridge for 1-2 hours before roasting to dry out the skin further.
