Ingredients
2 cups heavy cream, very cold
1/2 cup powdered sugar
1 teaspoon vanilla extract
4 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
6-8 ounces store-bought or homemade meringue cookies, crushed into bite-sized pieces
Optional: fresh mint leaves for garnish
Instructions
Step 1: In a large mixing bowl, combine the very cold heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overbeat.
Step 2: Gently fold in about two-thirds of the crushed meringue cookies into the whipped cream mixture.
Step 3: Carefully fold in half of the mixed fresh berries into the cream and meringue mixture.
Step 4: Transfer the dessert to a large serving bowl or individual dessert glasses.
Step 5: Top with the remaining fresh berries and the remaining crushed meringue cookies.
Step 6: Cover and chill the Berries on a Cloud Dessert in the refrigerator for at least 1-2 hours before serving to allow the flavors to meld. Garnish with fresh mint, if desired, just before serving.
Notes
For an extra touch of elegance, layer the dessert in clear glasses to showcase the beautiful colors and textures. You can also add a drizzle of raspberry coulis or a sprinkle of lemon zest for added flavor.
