Ingredients
4 cups cooked chicken, shredded or cubed
1 lb fresh broccoli florets, lightly steamed
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup sour cream
1 tbsp lemon juice
1 tsp curry powder
2 cups sharp cheddar cheese, shredded
1/2 cup Panko breadcrumbs
2 tbsp unsalted butter, melted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with butter or non-stick spray.
Step 2: Place the steamed broccoli florets in an even layer at the bottom of the dish, followed by the cooked chicken pieces on top.
Step 3: In a bowl, whisk together the cream of chicken soup, mayonnaise, sour cream, lemon juice, and curry powder until smooth and combined.
Step 4: Pour the sauce mixture evenly over the chicken and broccoli layers, then sprinkle the shredded cheddar cheese across the top.
Step 5: Mix the melted butter with the Panko breadcrumbs and sprinkle over the cheese. Bake for 25-30 minutes until golden and bubbly.
Notes
For best results, do not over-steam the broccoli as it will soften further in the oven. Use sharp cheddar for the most flavor.
