Instructions
Step 1: In a shallow dish, whisk together the eggs, milk, vanilla extract, and 1/2 teaspoon of cinnamon until well combined. In a separate small bowl, mix the 1/2 cup granulated sugar and 1 tablespoon of cinnamon for your filling.
Step 2: Take one slice of bread at a time and, using a rolling pin, flatten it as much as possible without tearing.

Step 4: Gently dip each roll up into the egg mixture, ensuring all sides are coated. Don't let them soak for too long – just a quick dip is enough to absorb the liquid without making them soggy.
Step 5: Heat a lightly greased non-stick skillet or griddle over medium heat. Place the roll ups seam-side down first, then cook, turning occasionally, until all sides are golden brown and cooked through, about 2-3 minutes per side.
Step 6: While the Cinnamon French Toast Roll Ups are still warm from the pan, roll them in the remaining cinnamon sugar mixture (1/4 cup sugar, 1/2 tsp cinnamon) until evenly coated.
