Ingredients

1 (15-ounce) can black-eyed peas, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1 ½ cups frozen corn, thawed (or 1 can corn, drained)
1 red bell pepper, finely diced
1 green bell pepper, finely diced
½ red onion, finely diced
2 Roma tomatoes, seeded and diced
¼ cup chopped fresh cilantro
For the Dressing:
¼ cup olive oil
3 tablespoons lime juice (from 1-2 limes)
1 tablespoon red wine vinegar
1 teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon garlic powder
Salt and black pepper to taste

Instructions

Step 1: Prepare your vegetables. Finely dice the red bell pepper, green bell pepper, red onion, and Roma tomatoes. Chop the fresh cilantro.
Step 2: Combine the main ingredients. In a large mixing bowl, gently combine the rinsed and drained black-eyed peas, black beans, thawed corn, diced red bell pepper, green bell pepper, red onion, and diced tomatoes. Add the chopped cilantro.
Step 3: Whisk the dressing. In a separate small bowl, whisk together the olive oil, lime juice, red wine vinegar, chili powder, ground cumin, garlic powder, salt, and black pepper until well combined.
Step 4: Dress the Cowboy Caviar. Pour the dressing over the vegetable and bean mixture. Toss gently to ensure all ingredients are evenly coated.
Step 5: Chill and serve. For best results, cover the bowl and refrigerate the Cowboy Caviar for at least 30 minutes to allow the flavors to meld. Serve chilled with your favorite tortilla chips, pita bread, or as a topping for grilled meats.

Notes

For an extra kick, add a diced jalapeño to the mix. The flavors deepen overnight, making it a great make-ahead dish.
