Ingredients

1 bag (32 oz) frozen tater tots
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 ½ cups milk (whole or 2%)
2 cups freshly grated sharp cheddar cheese
¼ tsp cayenne pepper (or to taste)
½ tsp smoked paprika
½ tsp garlic powder
Pinch of salt
Pinch of black pepper
Fresh chopped chives or green onions for garnish (optional)

Instructions

Step 1: Preheat your oven to 425°F (220°C) or set your air fryer to 375°F (190°C).
Step 2: Spread the frozen tater tots in a single layer on a baking sheet (for oven) or in the air fryer basket. Ensure they are not overcrowded. If necessary, cook in batches.
Step 3: Bake for 20-25 minutes in the oven, flipping halfway through, or air fry for 15-20 minutes, shaking the basket every 5 minutes, until they are golden brown and incredibly crispy. You want them to be audible when you bite into them!
Step 4: In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Once melted, sprinkle in 2 tablespoons of all-purpose flour. Whisk continuously for 1-2 minutes to create a smooth roux. This will cook out the raw flour taste.
Step 5: Slowly whisk in 1 ½ cups of milk (whole milk or 2% milk works best for creaminess) until the mixture is smooth and begins to thicken. Continue to cook, stirring frequently, until the sauce starts to bubble and coats the back of a spoon.
Step 6: Reduce the heat to low. Add 2 cups of freshly grated sharp cheddar cheese, ¼ teaspoon of cayenne pepper (or to taste), ½ teaspoon of smoked paprika, ½ teaspoon of garlic powder, and a pinch of salt and black pepper. Stir continuously until the cheese is completely melted and the sauce is smooth and creamy. Taste and adjust seasonings as needed. If the sauce becomes too thick, add a splash more milk until desired consistency is reached.
Step 7: Once your tater tots are perfectly crispy, transfer them to a serving platter or individual bowls.
