Ingredients
1 (32 oz) bag frozen crinkle-cut fries
1 tbsp vegetable oil
2 cups pre-cooked shredded BBQ pulled pork (or chicken/brisket)
1/2 cup BBQ sauce, plus more for drizzling
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup finely diced red onion
1/4 cup chopped fresh cilantro
1-2 jalapeños, thinly sliced (seeds removed for less heat)
1/4 cup sour cream or ranch dressing (for topping, optional)
Salt and black pepper to taste
Instructions
Step 1: Preheat your Traeger Flatrock Flat Top Grill. Turn all burners to medium-high heat. Once hot, add 1 tablespoon of vegetable oil to the griddle surface and spread evenly.
Step 2: Cook the frozen fries. Spread the frozen crinkle-cut fries in an even layer across the hot griddle. Cook for 8-10 minutes, flipping occasionally with a spatula, until golden brown and crispy. Season with salt and pepper to taste.
Step 3: Warm the BBQ meat. While the fries are cooking, clear a small section on the griddle and add the 2 cups of pre-cooked shredded BBQ pulled pork. Heat through, stirring occasionally, until warmed. Mix in a little extra BBQ sauce if desired to keep it moist.
Step 4: Assemble the Loaded BBQ Cheese Fries. Once the fries are crispy, gather them into a mound on one side of the griddle. Top generously with the warmed BBQ meat.
Step 5: Add the cheese and melt. Evenly sprinkle the 1 cup of shredded sharp cheddar cheese and 1 cup of shredded Monterey Jack cheese over the meat and fries. For the ultimate melt, cover the fries and cheese with a metal dome or a large piece of foil for 2-3 minutes, or until the cheese is bubbling and completely melted.
Step 6: Transfer and garnish. Carefully transfer the Loaded BBQ Cheese Fries to a large serving platter. Drizzle with extra BBQ sauce, a dollop of sour cream or ranch (if using), the 1/4 cup of finely diced red onion, 1/4 cup of chopped fresh cilantro, and the sliced jalapeños. Serve immediately and enjoy!
Notes
For best results, use pre-cooked pulled pork or brisket. The Traeger Flatrock makes crisping fries and melting cheese incredibly efficient.
