Ingredients
2 lbs ground beef (80/20 chuck preferred)
1/2 cup milk (whole milk)
1 cup plain breadcrumbs
1 medium onion, finely chopped
2 cloves garlic, minced
1 large egg
1 tablespoon Worcestershire sauce
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line a baking sheet with parchment paper.
Step 2: In a large bowl, combine the milk and breadcrumbs. Let them sit for 5 minutes to allow the breadcrumbs to absorb the milk.
Step 3: Add the ground beef, finely chopped onion, minced garlic, egg, Worcestershire sauce, dried parsley, salt, and black pepper to the bowl with the breadcrumb mixture.
Step 4: Using your hands, gently mix all the ingredients until just combined. Be careful not to overmix, as this can lead to a tough meatloaf.
Step 5: Transfer the meat mixture to the prepared loaf pan and gently press it down evenly, or form it into an oval loaf shape on the parchment-lined baking sheet.
Step 6: In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread about two-thirds of the glaze evenly over the top of the meatloaf. Reserve the remaining glaze for later.
Step 7: Bake for 45-50 minutes. After this time, remove the meatloaf from the oven and spread the remaining glaze over the top.
Step 8: Return the meatloaf to the oven and continue baking for another 15-20 minutes, or until an internal temperature of 160°F (71°C) is reached when checked with a meat thermometer.
Step 9: Once cooked, remove the meatloaf from the oven. Let it rest in the pan for 10-15 minutes before slicing. This resting period allows the juices to redistribute.
