Ingredients
1/2 cup (113g) unsalted butter, softened
1/2 cup (128g) creamy peanut butter
1 teaspoon vanilla extract
1 1/2 cups (180g) powdered sugar
1 cup (90g) old-fashioned rolled oats
1/2 cup (85g) mini chocolate chips
1/2 cup (40g) shredded coconut, plus extra for coating
Instructions
Step 1: In a large mixing bowl, cream together the softened butter and peanut butter until smooth and well combined. You can use a stand mixer with a paddle attachment or a hand mixer.
Step 2: Beat in the vanilla extract until fully incorporated.
Step 3: Gradually add the powdered sugar, mixing on low speed until combined, then increase speed to medium and beat until light and fluffy. Scrape down the sides of the bowl as needed.
Step 4: Fold in the rolled oats, mini chocolate chips, and 1/2 cup shredded coconut until evenly distributed. The mixture will be thick.
Step 5: Place the remaining shredded coconut (about 1/2 to 1 cup) in a shallow dish or plate.
Step 6: Roll the Moose Farts mixture into 1-inch balls. Then, roll each ball in the shredded coconut until fully coated.
Step 7: Arrange the finished Moose Farts on a baking sheet lined with parchment paper or a plate. Refrigerate for at least 30 minutes to allow them to firm up before serving. Store any leftovers in an airtight container in the refrigerator.
Notes
For best results, ensure your butter is truly softened, not melted, for the right consistency. If the mixture is too sticky, chill it for 10-15 minutes before rolling. These Moose Farts are a fantastic make-ahead treat!
