Ingredients

2 lbs store-bought pizza dough (or homemade, divided into 6 equal portions)
1.5 cups pizza sauce (marinara recommended)
3 cups shredded low-moisture part-skim mozzarella cheese (plus optional provolone or Parmesan)
8 oz thinly sliced pepperoni
Light flour for dusting
Cooking spray or butter for greasing pan

Instructions

Step 1: Preheat oven to 400°F (200°C). Thoroughly grease and lightly flour a 9-inch springform pan. Crucial for easy release!
Step 2: Divide pizza dough into 6 equal portions. On a lightly floured surface, roll one portion into a thin, 9-inch circle. Carefully transfer to the springform pan, pressing gently to fit evenly.
Step 3: Spread about 1/4 cup pizza sauce evenly over the dough, leaving a small 1/4-inch border. Sprinkle generously with about 1/2 cup mozzarella blend, then arrange a single layer of pepperoni slices.
Step 4: Repeat: Roll out another dough portion, place it over the pepperoni, then add sauce, cheese, and pepperoni. Continue until you have 6 dough layers and 5 filling layers. The top layer should be dough, followed by the remaining sauce, cheese, and pepperoni.
Step 5: For even cooking without over-browning, cover the springform pan loosely with aluminum foil.
Step 6: Bake for 25 minutes with foil. Carefully remove foil and continue baking for another 15-20 minutes, or until the top is golden, cheese bubbly, and cake cooked through. If browning too fast, loosely tent with foil again.
Step 7: Once baked, remove the Pepperoni Pizza Layer Cake from the oven. Let it rest in the springform pan on a wire rack for at least 15-20 minutes before unmolding. This allows layers to set and makes slicing easier.
Step 8: After resting, run a thin knife around the edge before releasing the springform. Transfer to a serving platter. Slice into wedges and serve immediately.
