Ingredients
1.5 lbs large shrimp, peeled and deveined (fresh or thawed frozen)
4 tablespoons unsalted butter
2 tablespoons olive oil
6-8 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional, for heat)
1/4 cup chicken broth or dry white wine
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley, chopped
Salt and freshly ground black pepper to taste
Instructions
Step 1: Pat the shrimp thoroughly dry with paper towels. This is a crucial step for achieving a good sear. Season the dried shrimp generously with salt and black pepper.
Step 2: In a large skillet (cast iron or heavy-bottomed stainless steel works best), heat the olive oil over medium-high heat until shimmering.
Step 3: Add half of the shrimp to the hot pan in a single layer, ensuring not to overcrowd the skillet. Cook for 1-2 minutes per side, until they turn pink and opaque with a slight golden sear. Remove the cooked shrimp to a plate and repeat with the remaining shrimp. Set all cooked shrimp aside.
Step 4: Reduce the heat to medium-low. Add the butter to the same skillet. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for 30 seconds to 1 minute, until fragrant but not browned. Be careful not to burn the garlic.
Step 5: Pour in the chicken broth (or white wine), scraping up any browned bits from the bottom of the pan to deglaze. Let it simmer for about 1 minute until it reduces slightly. Stir in the fresh lemon juice and chopped parsley.
