Ingredients

1 tablespoon fresh lemon juice

Instructions

Step 1: Pat the shrimp thoroughly dry with paper towels. This is a crucial step for achieving a good sear. Season the dried shrimp generously with salt and black pepper.
Step 2: In a large skillet (cast iron or heavy-bottomed stainless steel works best), heat the olive oil over medium-high heat until shimmering.
Step 3: Add half of the shrimp to the hot pan in a single layer, ensuring not to overcrowd the skillet. Cook for 1-2 minutes per side, until they turn pink and opaque with a slight golden sear. Remove the cooked shrimp to a plate and repeat with the remaining shrimp. Set all cooked shrimp aside.
