Recipe: Courgette burgers, tasty, healthy and with very few calories

Courgette , made up of 95% water, is almost calorie-free (15 calories per 100 grams). However, it is very rich in minerals and trace elements, such as phosphorus, potassium, magnesium and calcium. Present in our traditional cuisine, below we suggest an alternative way to prepare courgettes.

By following the recipe we describe below it is possible to prepare excellent courgette burgers , tasty and delicious, allowing us to reduce meat consumption. Using the quantities below you can prepare approximately 6-8 burgers.

You need: 2 medium courgettes (total weight approximately 450 grams), 50 grams of powdered parmesan cheese, 50 grams of grated wholemeal bread, half a clove of ground garlic, a spoonful of ground onion, a teaspoon of sweet chilli pepper, 1 egg whole, salt and pepper to taste.

Peel and grate the courgettes, placing them on a sieve to release as much water as possible. We put the courgettes in a container, and add the parmesan, breadcrumbs, garlic, onion, salt and pepper. Mix well until all the ingredients are integrated.

In another plate we beat the egg, and also keep aside a little breadcrumbs. Take a portion of the dough and shape it into a meatball, place it in the egg and breadcrumbs. Repeat with the other portions (there will be approximately 6-8 in total). Finally, the “meatball” is crushed to give the shape of a hamburger.

It is possible to cook the courgette burgers in a pan with a little oil or, a healthier alternative, roast them.
