Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for non-stick baking and easy cleanup.
Step 2: Wash and scrub the sweet potatoes thoroughly. You can peel them if you prefer, but leaving the skin on adds nutrients and rustic texture. Slice the sweet potatoes into 1/4 to 1/2-inch thick rounds, aiming for uniform thickness for even cooking.
Step 3: In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper. Ensure each round is lightly coated.
Step 4: Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two baking sheets if necessary to allow proper roasting.
Step 5: Roast for 15-20 minutes, then flip the rounds. Continue roasting for another 10-15 minutes, or until the sweet potatoes are tender when pierced with a fork and have lovely caramelized edges.
Step 6: Remove the baking sheet from the oven. Drizzle the honey evenly over the hot sweet potato rounds.
Step 7: Carefully transfer the honey-glazed sweet potato rounds to a serving platter. Immediately crumble the feta cheese generously over the top. Garnish with chopped fresh parsley or chives, if desired. Serve warm.
