1.5 lbs Boneless Skinless Chicken Breasts
2 cups Chicken Broth (low sodium)
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Salt
1/2 tsp Black Pepper
1 tsp Dried Parsley (optional)
Instructions
Step 1: Place the chicken breasts in a single layer at the bottom of a large skillet or saucepan. Season the meat evenly with garlic powder, onion powder, salt, and pepper.
Step 2: Pour the chicken broth over the chicken until it is almost covered. If the broth doesn't cover the meat, add a little water.
Step 3: Bring the liquid to a light simmer over medium-high heat. Once simmering, reduce the heat to low, cover with a lid, and cook for 12-15 minutes until the internal temperature reaches 165°F.
Step 4: Remove the chicken from the liquid and let it rest for 5 minutes on a cutting board.
Step 5: Use two forks to shred the chicken into small pieces, or use a stand mixer with the paddle attachment on low speed for 30 seconds to shred quickly.
Step 6: Use immediately in your favorite recipe or store for later use.
Notes
For extra flavor, add a bay leaf or a slice of lemon to the poaching liquid. Do not let the liquid reach a rolling boil to prevent the chicken from becoming tough.
