Ingredients
2 lbs boneless skinless chicken breasts
2 (8 oz) blocks cream cheese
1 oz packet dry Ranch seasoning mix
1 cup shredded sharp cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup chopped green onions (optional garnish)
Instructions
Step 1: Place the chicken breasts in the bottom of your slow cooker in a single layer.
Step 2: Place the blocks of cream cheese on top of the chicken and sprinkle the entire packet of ranch seasoning over the top.
Step 3: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Step 4: Once the chicken is tender, use two forks to shred the chicken directly in the slow cooker, mixing it with the melted cream cheese.
Step 5: Stir in the shredded cheddar cheese and the crumbled bacon until well combined.
Step 6: Cover and let it sit for another 5-10 minutes until the cheddar is completely melted. Garnish with green onions before serving.
Notes
For a lighter version, you can use Neufchatel cheese and turkey bacon, though it will change the richness of the dish.
