Ingredients
8 cups unfiltered apple cider
2 cups orange juice
1 cup cranberry juice (unsweetened or lightly sweetened)
3-4 baking apples (e.g., Granny Smith, Honeycrisp), cored and scored
1/4 cup light brown sugar (or to taste)
4-5 cinnamon sticks
1 tbsp whole cloves
1 tsp allspice berries
1 large piece fresh ginger, thinly sliced (about 2 inches)
1 orange, studded with extra cloves (optional)
1/4 cup brandy or dark rum (optional, for alcoholic version)
Butter (for roasting apples)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Carefully core the baking apples, leaving the bottom intact. Score the skin around the middle of each apple. Place a small knob of butter and a sprinkle of brown sugar into the cored center of each apple. Bake for 30-40 minutes, or until softened and slightly caramelized.
Step 2: In a large, heavy-bottomed pot or Dutch oven, combine the apple cider, orange juice, and cranberry juice. Add the cinnamon sticks, whole cloves, allspice berries, and sliced fresh ginger. If using, add the whole orange studded with cloves.
Step 3: Stir in the brown sugar until it dissolves. Bring the mixture to a gentle simmer over medium heat. Do not boil. Let it simmer gently for at least 30-45 minutes to allow the flavors to meld and deepen.
Step 4: Once the Wassail has simmered sufficiently, carefully add the warm, roasted apples to the pot. If making an alcoholic version, stir in the brandy or rum. Heat gently for another 5-10 minutes, allowing the spirits to warm through.
Step 5: Ladle the warm Wassail into heatproof mugs. Garnish each serving with an orange slice, a fresh cinnamon stick, or one of the roasted apples from the pot. Serve immediately and enjoy.
Notes
For the best flavor, use fresh, whole spices and unfiltered apple cider. Adjust brown sugar to your preferred sweetness. If you don't have allspice berries, a pinch of nutmeg can be used as a substitute.
