Celery is a widely consumed and appreciated vegetable all over the world, also used for centuries in traditional medicine. It is used to reduce hypertension, thanks to a substance called 3-n-butylphthalide, which also gives celery its characteristic smell.

This substance can relax the muscles that support blood vessels, reducing the concentration of blood in them and regulating pressure.

In addition, the apigenin contained in celery dilates blood vessels by promoting blood circulation. This is why celery salt is a very healthy ingredient and indicated for those suffering from hypertension.

To prepare celery salt you need a whole celery root, including leaves.

Cut the root into small pieces, and leave the leaves whole. Put it on a baking sheet, covered with waxed or baking paper.

Bake at 130°C for 4 hours, then remove from the oven and reduce to a powder using a blender or mortar.
