Ingredients
12 oz chicken apple sausage, sliced into rounds
2 large sweet potatoes, peeled and diced into 1/2-inch cubes
2 medium Honeycrisp apples, cored and sliced into wedges
1 small red onion, sliced
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Step 2: Place the diced sweet potatoes and sliced onions on the sheet pan. Drizzle with olive oil and sprinkle with salt, pepper, and rosemary. Toss to coat evenly.
Step 3: Roast the potatoes and onions for 10-12 minutes until they just begin to soften.
Step 4: Remove the pan from the oven and add the sliced chicken sausage and apple wedges. Toss everything together to distribute the oil and seasonings.
Step 5: Return the pan to the oven and roast for an additional 15-20 minutes, or until the potatoes are tender and the sausage is browned.
Step 6: Serve warm, optionally garnished with extra fresh rosemary.

Ensure the sweet potatoes are cut into small, uniform cubes to guarantee they cook through in the same time as the apples and sausage.
