How to make cream cheese with 1 liter of milk, 1 yogurt and half a lemon

Despite the fact that supermarkets are full of all kinds of cheeses, one better than the other, it is always useful to know that it is possible to prepare a great fresh cheese at home, completely natural and very tasty.

To make fresh cheese you need very few ingredients: milk, yogurt and lemon. The result will be a great cheese, which you can use for salads, spread on bread or use for other preparations.

Ingredients: 1 liter of fresh whole milk, 1 natural yogurt, the juice of half a lemon, 1 absorbent cotton gauze, a bowl and a mold about 12 cm in diameter.

Heat the milk to a temperature of 90 degrees for about 15 minutes. Add the yogurt and lemon juice, and mix well.

Set the oven to 90 degrees, and pour all the mixture inside the mold. Bake for 2 minutes, until the whey has separated and turned a yellow color.

Place the gauze on the mold and, placing the bowl underneath, pour the contents of the mold directly onto the gauze. The whey will fall into the bowl, while the rennet will remain on the gauze.

Squeeze the gauze well to remove the whey. Pour the rennet back into the mold, and place a weight on it (a full jar or bottle). Place in the refrigerator for 30 minutes.

Remove the mold from the refrigerator and remove the gauze. You can add a little salt to the mixture. Transfer the cheese to another container and refrigerate for another 8 hours.
