Discover the secret to incredibly tender, juicy, and flavorful baked chicken with minimal effort. This recipe for melt-in-your-mouth baked chicken uses simple ingredients and a fool-proof method to deliver a family-favorite meal every time.

  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

4 bone-in, skin-on chicken thighs or drumsticks (about 2–2.5 lbs total)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
2 tablespoons unsalted butter, cut into 4 small pieces

Instructions

Step 1: Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish or line with parchment paper.
Step 2: Pat the chicken pieces thoroughly dry with paper towels. This step is crucial for crispy skin and for the seasoning to adhere properly.
Step 3: In a small bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, dried thyme (if using), salt, and black pepper. Mix until a paste forms.
Step 4: Place the dried chicken pieces in the prepared baking dish. Using your hands, generously rub the spice mixture all over the chicken, ensuring each piece is well coated.
Step 5: Pour the chicken broth into the bottom of the baking dish, around the chicken pieces. Place one small piece of butter on top of each chicken piece.
Step 6: Transfer the baking dish to the preheated oven and bake for 35-45 minutes, or until the internal temperature of the thickest part of the chicken (without touching the bone) reaches 165°F (74°C). For extra crispy skin, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
Step 7: Once baked, remove the chicken from the oven. Tent the baking dish loosely with foil and let the chicken rest for 5-10 minutes before serving. This allows the juices to redistribute, ensuring a truly melt-in-your-mouth baked chicken.

Notes

For the juiciest results, always use bone-in, skin-on chicken pieces. Don’t skip patting the chicken dry; it makes a huge difference for crispy skin. The pan drippings are incredibly flavorful – use them to spoon over your chicken or make a quick gravy!
