A classic Southern meatloaf featuring tender ground beef, aromatic vegetables, and a signature sweet and tangy glaze.

  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings

Ingredients

1.5 lbs ground chuck (80/20)
1 cup diced yellow onion
1 cup diced green bell pepper
1 large egg, lightly beaten
1 cup quick-cooking oats
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup ketchup (for the loaf)
1/3 cup ketchup (for the glaze)
2 tablespoons brown sugar
1 tablespoon yellow mustard

Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a baking dish or line a broiler pan with foil for easy cleanup.
Step 2: In a large mixing bowl, combine the ground beef, diced onion, diced bell pepper, egg, oats, salt, black pepper, garlic powder, and 1/2 cup of ketchup.
Step 3: Using your hands, gently mix the ingredients until just combined. Be careful not to overwork the meat to ensure a tender Paula Deen Meatloaf.
Step 4: Shape the mixture into a loaf shape (approximately 9×5 inches) and place it in the prepared baking dish.
Step 5: In a small bowl, whisk together the remaining 1/3 cup ketchup, brown sugar, and yellow mustard to create the glaze.
Step 6: Spread half of the glaze evenly over the top of the meatloaf.
Step 7: Bake in the preheated oven for 45 minutes.
Step 8: Remove from the oven and spread the remaining glaze over the top. Bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
Step 9: Remove the Paula Deen Meatloaf from the oven and let it rest for 10-15 minutes before slicing and serving.

Notes

For the best results, use 80/20 ground chuck and let the meat rest after baking to ensure it stays juicy.
