Ingredients
4 cups frozen pineapple chunks
1/2 cup full-fat coconut milk (canned)
2 tablespoons honey or agave nectar
Instructions
Step 1: Place the frozen pineapple chunks into a high-powered blender or food processor.
Step 2: Pour the coconut milk and the honey (or agave) over the pineapple.
Step 3: Pulse the mixture several times to break up the large chunks of fruit.
Step 4: Blend on medium-high speed, using a tamper if necessary, until the mixture is completely smooth and creamy.
Step 5: Serve immediately for a soft-serve consistency, or transfer to a container and freeze for 1-2 hours for a scoopable texture.
Notes
For a lower-fat version, you can substitute coconut milk with almond milk or pineapple juice, though it will be less creamy.
