Ingredients
1.5 lbs chicken breast or thighs, cubed
8 oz cremini mushrooms, sliced
4 cloves garlic, minced
1/3 cup honey
1/4 cup low-sodium soy sauce
1 tablespoon apple cider vinegar
1 tablespoon cornstarch
2 tablespoons olive oil
Salt and pepper to taste
Green onions for garnish
Instructions
Step 1: Pat the chicken dry with paper towels and season with salt, pepper, and cornstarch.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on all sides (about 5-6 minutes). Remove and set aside.
Step 3: In the same skillet, add the sliced mushrooms. Sauté for 4 minutes until they are softened and browned.
Step 4: Add the minced garlic to the mushrooms and cook for 30 seconds until fragrant.
Step 5: Whisk together the honey, soy sauce, and vinegar in a small bowl. Pour the mixture into the skillet.
Step 6: Add the chicken back into the pan. Toss everything to coat and simmer for 2-3 minutes until the sauce thickens into a sticky glaze.
Step 7: Garnish with sliced green onions and serve immediately over rice or vegetables.
Notes
For an extra kick, add a teaspoon of sriracha or red pepper flakes to the sauce.
