Ingredients
1 tbsp olive oil
1 lb lean ground beef (90/10 or 93/7 recommended)
1 medium yellow onion, chopped
3 cloves garlic, minced
1 tsp dried Italian seasoning
1/2 tsp smoked paprika (optional, but recommended)
1/4 tsp red pepper flakes (optional, for heat)
6 cups beef broth (low sodium preferred)
1 can (14.5 oz) diced tomatoes, undrained
1 tbsp Worcestershire sauce
Salt and freshly ground black pepper, to taste
8 oz egg noodles (or other small pasta/rice noodles)
Fresh parsley or green onions, chopped, for garnish
Instructions
Step 1: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and break it apart. Brown thoroughly, stirring occasionally, until no pink remains and it starts to crisp. Drain any excess fat if necessary.
Step 2: Reduce heat to medium. Add the chopped onion to the pot and sauté for 5-7 minutes, stirring until softened and translucent.
Step 3: Add the minced garlic to the pot. Cook for 1-2 minutes until fragrant, being careful not to burn it.
Step 4: Stir in the Italian seasoning, smoked paprika (if using), and red pepper flakes (if using). Cook for 1 minute, allowing spices to toast.
Step 5: Pour in the beef broth and diced tomatoes. Scrape the bottom of the pot to loosen any browned bits. Bring the mixture to a simmer.
Step 6: While the broth mixture simmers, cook the egg noodles according to package directions in a separate pot of salted boiling water until al dente. Drain well.
Step 7: Once the broth is simmering gently, stir in the Worcestershire sauce. Taste and season generously with salt and black pepper. Let it simmer for another 5-10 minutes for flavors to meld.
Step 8: To serve, divide the cooked egg noodles among individual bowls. Ladle the hot ground beef and broth mixture over the noodles.

Notes
For best results, cook noodles separately to prevent them from becoming mushy and absorbing too much broth. Adjust spice levels to your preference with more or fewer red pepper flakes. Leftovers can be stored separately (broth and noodles) for up to 3-4 days in the refrigerator.
