A simple, quick, and foolproof recipe for perfectly light, airy, and stable homemade whipped cream that elevates any dessert.

  • Total Time: 5 minutes
  • Yield: Approximately 2 cups (6-8 servings)

Ingredients

1 cup (240ml) very cold heavy cream (36% fat or higher)
2 tablespoons powdered sugar (confectioners' sugar), or to taste
1/2 teaspoon pure vanilla extract

Instructions

Place a large mixing bowl (preferably metal or glass) and your whisk attachment (or beaters) in the freezer for 10-15 minutes to chill thoroughly. This is a crucial step for optimal whipping.
Pour the very cold heavy cream into the chilled bowl. Add the powdered sugar and vanilla extract.
Using an electric mixer (stand mixer with whisk attachment or hand mixer with beaters), start beating the cream mixture on low speed initially to prevent splattering. Once the sugar and vanilla are incorporated, gradually increase the speed to medium-high.
Continue to beat until the cream thickens and soft peaks form. This means when you lift the whisk, the cream holds its shape for a moment but then gently flops over.
For a more stable whipped cream, continue whipping on medium-high speed until stiff peaks form. The cream should hold its shape firmly when the whisk is lifted. Be careful not to over-whip, as it can quickly turn grainy or into butter.

Notes

For extra stability in humid conditions or if making ahead, you can add 1 teaspoon of cornstarch or cream of tartar along with the powdered sugar before whipping. For flavored variations, incorporate extracts (like almond or peppermint) or spices (like cinnamon) as you add the vanilla. Always keep unused whipped cream refrigerated in an airtight container for up to 2-3 days.
