Lentils have been consumed since prehistoric times and have been considered the meat of the poor for centuries. It is a plant species that is grown in all areas with a warm climate. There are different varieties and they are mainly differentiated by their color.

Lentils are a treasure trove of protein, fiber, iron, potassium and magnesium  . Its iron content is higher than that of meat but it is absorbed to a lesser extent. In addition, lentils lack some amino acids so it is better to assimilate them with pasta or cereals to overcome the problem.


They are also very nutritious and energetic and rich in vitamin B1, vitamin B2 and vitamin B6. Suffice it to say that 100 g of lentils provide 290 kcal. In the market, lentils can be found pre-cooked in cans or dried to soak and then boil.  But let’s see together a recipe with this legume.

Rustic with lentils and eggs: the recipe

Lentils are a valid meat substitute and, therefore, especially suitable for vegetarian and vegan diets. However, this recipe involves the use of some ingredients that are not part of the vegetarian diet style but with a few small changes you can adapt it to your diet.

Here are the ingredients for this recipe:

– 350 g of red lentils
– 200 g of yogurt
– 50 ml of olive oil
– 3 eggs
– 10 g of baking powder
– 5 g of baking soda
– to taste diced cheese (feta or other)
– to sesame seeds to taste
– try black cumin
– chilli to taste
– chopped dill to taste
– salt to taste

The process time of the recipe is very short, just 20 minutes, which must then be added to the 30 minutes of cooking.  With these doses you will obtain approximately 8 slices of rustic with approximately 260 kcal per slice.

Development of the rustic

Below we detail the procedures to follow to obtain rustic lentils and eggs:

  • First, place the lentils in a bowl of water and let them sit for at least 2 or 3 hours. Alternatively, they can be boiled for just 5 minutes. Then in both cases drain them with a strainer with a weight on top to eliminate all the water they contain.
  • Take a bowl and pour the lentils, eggs, yogurt and oil into it. and Blend with a hand blender until you get a mixture that satisfies you.
  • Then you can add baking powder and baking soda and mix with a spatula.
  • Also add the cheese, cumin, dill, chilli and salt and mix with the spatula until you obtain a smooth mixture.
  • Then transfer the mixture obtained to a greased or greased and floured cake pan (either with flour or breadcrumbs). Level the mixture and decorate with sesame seeds and black cumin.
  • Bake in a preheated oven at 180° for approximately half an hour.

You will only have to wait a few minutes for it to cool and you can enjoy your rustic lentil and egg dish.
